With busy schedules and cooler temps, Fall is the perfect time to pull out the slow cooker and put together an easy dinner the whole family will enjoy.
Ingredients
  • 1 cup finely chopped onion, lightly packed
  • 2 lbs boneless, skinless chicken fillets
  • 1/2 cup What Exit White Wine or your favorite Old York Cellars White Wine
  • 1/4 cup freshly squeezed lemon juice
  • 2 tbsps olive oil
  • 1/4 cup finely chopped fresh parsley
  • 1 tsp kosher salt
  • 3/4 tsp black pepper
  • 1 tsp dried thyme
  • 8 1/2 ozs Orzo or pasta of your choice
  • 1 cup boiling water (plus extra if needed)
  • grated cheese for serving (optional)
Directions

Combine the onion, chicken, What Exit White Wine (or your favorite Old York Cellars White wine), lemon juice, olive oil, parsley, salt, pepper and thyme in the slow cooker.

Cook on low for 5 to 6 hours, or until the chicken is tender and falling apart.

Then turn the slow cooker to high and add the orzo (or other small pasta of your choice). Stir and cook on high until the orzo has absorbed most of the liquid already in the slow cooker. Start adding hot water, a 1/2 cup to begin with and then 1/4 cup at a time as needed for the pasta to cook through. Total cooking time for the pasta should be 25 to 35 minutes. Turn the slow cooker off when the pasta is al dente and the consistency is quite wet, since the pasta will continue to absorb liquid as it rests.

Serve with the grated cheese. (optional)

Cheers & Enjoy with a glass of Old York Cellars White Wine!
